Whole30: Day 3 & 4

Hello Friends,

Sorry I didn't update you yesterday on my whole30 experience, my little bundle of joy decided to show her demon side yesterday and I didn't really have time to sit down and write.
However, as far as the diet goes, it was a good day! I had the same things for breakfast and lunch, for dinner, I made this Chicken Ranch bake, which was really good. I forgot to take a picture of it though. :(

I was feeling pretty good yesterday, almost like my old self. I even had the energy to work out!
One symptom which may be a little TMI, is I have been in the bathroom constantly. And I mean constantly. I think I must have gone at least ten times yesterday.

Today I had the same thing for breakfast. For lunch, I had leftovers from dinner the other night. For dinner, I made this sausage sheet pan dinner.


I have been feeling exhausted again today. Rather like a hangover, headache, whole body aches, etc. The child had a horrible night last night for sleeping, so I am unsure if this is due to lack of sleep or whole30, but I did read that today was supposed to be a bad day.

I am craving cheese like crazy.

Anyways, more tomorrow.

Whole 30: Day 2

Hello Friends,
So here we are, day two. I must say my symptoms hit fast and hard today. I was awoken around 4 am by my bundle of joy, and had excessive gnawing hunger. I was surprised because I hadn't felt very hungry all day. I resisted the urge to get up and dump the fridge down my throat.  This morning I woke up with the following symptoms:
Headache
Body ache
Lightheadedness
Dizziness
Nausea

Apparently, these symptoms are all common, this stage of the detox is fondly referred to as the "hangover" and it is supposed to last for two to three days.

For breakfast, I had the same thing as yesterday, with the exception of a banana instead of a mango. I also had two cups of coffee this morning, which I never do.

I am considering spending the entire day on the couch cuddling my love bug. I truly wish that was an option. However, homework calls.

For lunch, I am having the same thing as yesterday.



For dinner, I made roasted broccoli and sweet potatoes, with baked chicken breast. I also made BBQ sauce to go with it. I liked the sauce, but my husband didn't.



feeling much better now, nearly all of my symptoms started to go away around 4pm. Heres to hoping tomorrow is symptom-free!

Starting my Whole 30 Journey:Day 1

Hello friends,
I have decided to take the whole 30 challenge! I will be blogging about my experiences every day, along with my recipes.
I decided to take the challenge because I am three months postpartum. I have been trying to lose the baby weight and it is just not happening for me. So I figured a full body Detox might help jump-start things!
My goals are:
Weight-loss
Digestion
And to change how I think about food.

Yesterday I spent four hours in the kitchen food prepping for my husband and I. I'm hoping as I get used to the recipes that that time will diminish, as anyone with a baby knows four hours is an eternity. However, I must say, I truly enjoyed trying out the new recipes! I have always loved to cook and I feel as though I am already beginning to think about food differently.

My husband has a long commute to work early in the morning, so I needed to make him something he could eat on the go.  I chose these egg muffins, as they are high in protein and to-go friendly. 


For his lunch, I decided to make this chicken salad, as it seemed like something he would like. Also, he only has about fifteen minutes for lunch, so I needed something he could eat quickly without a trip to the microwave, and this fit the bill. 

 

My local grocery store did not have whole30 friendly mayo, so I had to make my own. I used this recipe. I will let you know what my husband thinks of both these meals. 

For my breakfast, I decided to make this breakfast casserole, as it looked filling and should last me the week. As a new mom, I never have time to cook in the morning, so having this ready to go will be great. Usually its just a bowl of cereal, or an energy bar in the morning, so I am super excited for real food. 


I must say, my breakfast was delicious and filling! I had unsweetened almond milk in my coffee, which was surprisingly good!

For my lunches this week, I decided to go with Chicken and Cauliflower Rice Bowls. I chose this recipe basically because it looked good to me. I am mostly a stay at home mom, so I have full access to a microwave most of the time. I am a graduate student, and have classes on Mondays, but I can easily heat this up before class.

For dinner today we had spaghetti squash and  made sauce and chicken sausage. So far we feel pretty good!
