Starting my Whole 30 Journey:Day 1

Hello friends,
I have decided to take the whole 30 challenge! I will be blogging about my experiences every day, along with my recipes.
I decided to take the challenge because I am three months postpartum. I have been trying to lose the baby weight and it is just not happening for me. So I figured a full body Detox might help jump-start things!
My goals are:
Weight-loss
Digestion
And to change how I think about food.

Yesterday I spent four hours in the kitchen food prepping for my husband and I. I'm hoping as I get used to the recipes that that time will diminish, as anyone with a baby knows four hours is an eternity. However, I must say, I truly enjoyed trying out the new recipes! I have always loved to cook and I feel as though I am already beginning to think about food differently.

My husband has a long commute to work early in the morning, so I needed to make him something he could eat on the go.  I chose these egg muffins, as they are high in protein and to-go friendly. 


For his lunch, I decided to make this chicken salad, as it seemed like something he would like. Also, he only has about fifteen minutes for lunch, so I needed something he could eat quickly without a trip to the microwave, and this fit the bill. 

 

My local grocery store did not have whole30 friendly mayo, so I had to make my own. I used this recipe. I will let you know what my husband thinks of both these meals. 

For my breakfast, I decided to make this breakfast casserole, as it looked filling and should last me the week. As a new mom, I never have time to cook in the morning, so having this ready to go will be great. Usually its just a bowl of cereal, or an energy bar in the morning, so I am super excited for real food. 


I must say, my breakfast was delicious and filling! I had unsweetened almond milk in my coffee, which was surprisingly good!

For my lunches this week, I decided to go with Chicken and Cauliflower Rice Bowls. I chose this recipe basically because it looked good to me. I am mostly a stay at home mom, so I have full access to a microwave most of the time. I am a graduate student, and have classes on Mondays, but I can easily heat this up before class.

For dinner today we had spaghetti squash and  made sauce and chicken sausage. So far we feel pretty good!
